Cooking our Hearts Out.

It’s been a busy busy week…..for Jon. He’s had finals and I’m talking more than one every single day for two weeks straight!  But he’s doing well.  Not too stressed and still chugging a long.

I on the other hand have been SUPER busy reading the Girl with the Dragon Tattoo.  That books not going to read itself before its due back to the library you know. I’m on a deadline here!  I did finish it today and it was good just like everyone said it would be.  It felt so good to read a book I couldn’t put down!

We’ve made some dinners lately that have been deeeelicious.   And not that I want this to be a recipe blog or that I feel that I have some authority to speak on the topic of cooking, but I like to take pictures when we cook fancy foods.  I like these memories.  And maybe later I can stumble upon these pictures and remember how delicious it was and be inspired to make it again.  Yay!

Last night we made lasagna from scratch.  I had previously thought that this was impossible.  I had never seen it done! It turns out its really easy.  More than anything it just takes time; we made the sauce from scratch and it had to simmer for a few hours.  We threw in some of our chicken apple sausage from Costco and it was sooooo good in the sauce! Who would have thought? Then it was just about layering.  Simple.

Sesame seared tuna salad with Asian dressing and egg drop soup on the side.

aprilfood 8 Cooking our Hearts Out.Panko breaded tilapia topped with dill sauce and a side of brussell sprouts, broccoli, and red skin potatoes. This was Jon’s favorite for the week, or just for life.  He wanted to make it again the next night.

aprilfood 1 Cooking our Hearts Out.Moroccan carrot soup with toasted pita bread and a dollop of greek yogurt.  This was my favorite for the week.  I gave it a 10. I hardly ever do that.

aprilfood Cooking our Hearts Out.We’ve been getting a lot of recipes lately from an epicurious app on our phone that uploads the shopping list instantly.  It’s so convenient.

Even though we’ve been busy cooking and some of studying, we also had time this week to hangout with Jon’s friend Lacy from high school who was in town.  We went out to eat a couple nights and hungout by the water.  It was fun to meet Lacy and her familiy.  We love having visitors!

Last two things! You may have noticed I changed my blog around.  I like it MUCH better.  AND, I have only one more week of work! but who is counting.
